Fun Recipes Ideas For Your Exotic Veggies!
Romanesco Fettuccine with Capers and Kalamata Olives:
This yummy pasta dish can be served as a side dish or a main dish. You will need:
- 1 head of chopped Romanesco Broccoli
- 16oz ( 1lb) of Fettuccine pasta
- 2 Tbsp of Olive Oil
- 3 large cloves of minced garlic
- 1/2 cup pitted Kalamata olives, sliced lengthwise
- 2 tablespoons chopped capers
- 1 cup Italian Parsley leaves
- Red Pepper Flakes to taste
- Salt and Pepper to taste
- Fresh Parmesan cheese
Preheat the oven to 450 degrees Fahrenheit with a rack in the center position. After chopping the Romanesco, toss it with half the Olive Oil and Salt/Pepper. Distribute evenly on the pan, then roast in the oven for 15 to 20 minutes, or until caramelized. You will want to toss it halfway.
While the broccoli is cooking, heat the remaining olive oil in a skillet over medium-low heat. Add the garlic and sauté for 1 to 2 minutes, or until fragrant. Add the Olives, Capers, and Red Pepper Flakes to the pan, and sauté for an additional minute. Add Salt/Pepper if you'd like. Add half of the Parsley to the skillet, stir it in, then turn off the heat.
Bring a large pot of water with salt to a boil. Add the pasta and cook until done, then drain. You will want to save a little bit of the cooking water. Return the pasta to the pot and add the Kalamata Olives, Garlic, Caper mixture, and the roasted Romanesco. Stir together, then add the rest of the Parsley and more Salt/Pepper if needed. If the food is dry, you can add a tad more olive oil and a bit of the cooking water.
Then top with Parmesan Cheese and enjoy!
Tangy Lemon Cucumber Salad
This is an easy and speedy recipe to make and is the perfect tangy side dish for grilled food! You will need:
- 1lb thinly sliced Lemon Cucumbers
- 1/2 thinly sliced Red Onion
- 21/2 Tbsp of Red Wine Vinegar
- 1 1/2 tsp Salt
- 11/2 tsp Sugar
Mix together the Cucumbers in a bowl with the Sugar and Salt and let it sit for about 5 minutes. Then mix in the Onion and Vinegar and let it sit in the refrigerator for 10 minutes, or until ready to serve.
Sauteed Rainbow Swiss Chard With Apple and Bacon
This option can be served as a mouth-watering brunch dish, appetizer, or side dish. You will need:
- 1 big bunch of Rainbow Swiss Chard
- 1 sliced Yellow Onion
- 8oz of cooked, chopped Bacon
- 1 diced Gala Apple
- 2Tbsp Apple Cider Vinegar
- Salt and Pepper to taste
Cook the Bacon before doing anything else. Cook until Slightly Crispy or to your liking. Remove Bacon and saute the onions in the Bacon drippings until translucent. Add The rest of the ingredients into the pan and cook until tender. Add however much Salt and Pepper you like and serve!
*If you want to make this dish slightly healthier, cook the ingredients in Olive Oil instead of Bacon drippings.
Purple Dragon Carrot Hummus
This one is perfect for an eye-catching snack or delicious appetizer! You will need:
- 3 steamed & chopped Purple Dragon Carrots
- 1 can drained Chickpeas
- 1/3 cup Olive Oil
- 1/3 cup Lemon Juice
- zest from 2-3 Lemons
- 2/3 cup Tahini
- 2 chopped Garlic Cloves
- 1 tsp Salt
- 1 tsp Cumin
- Herbs or Seasonings of choice for toppings
Combine everything except the Olive Oil into a food processor. You can use a blender instead, but it will take more time. While blending together, slowly drizzle in the Olive Oil until the Hummus is smooth. Adjust seasoning as you like it while mixing. Then serve in a bowl and top with whatever you like, or serve plain!
